Caramelized banana stuffed french toast recipe

Now known as the most amazing thing I have ever eaten.

Yes the french toast obsession is still going strong but it has been taken to a whole new level with this joyous creation! 

As per usual, I was sat watching The Food Network when I saw this baby being served up in a diner in the US of A. I actually sat there with the remote going something like this "NO! OMG! LOOK AT THAT! WHAT! WOW! NOW THEY ARE PUTTING SYRUP ALL OVER IT! JESUS!"

The next day, I was recreating it! The version on the show was made using Challah bread which I can't get hold of very easily even though I absolutely love the stuff! I substituted with a fresh baked loaf of bread from the supermarket but you could use any bread you fancy.

This post is a little light on photos as I was so carried away with excitement I forgot to keep taking them! 


Banana Stuffed French Toast With Maple Syrup {Serves 2}

You'll need: 
  • 2 large Eggs
  • 4 thick cut slices of bread
  • 30ml milk
  • 4tbsp brown sugar
  • 2 large ripe/over ripe bananas
  • 1/4 tub cream cheese
  • 1tsp vanilla extract
  • 2tbsp butter
  • Cinnamon
  • Nutmeg
  • Maple syrup

1) Peel and chop up your bananas. Add 2tbsp of butter & 3tbsp of brown sugar into a frying pan and heat until melted. Add in the chopped banana and cook for a couple of minutes on a low heat to make a caramel and heat the bananas through and then remove from the heat.

2) In a bowl, add in 1/4 of a tub of cream cheese and then pour in your bananas and stir. Divide your banana mixture between 2 slices of bread and then use the other 2 slices to make a sandwich.

3) In a large, shallow dish, beat 2 eggs and add in 1tbsp of brown sugar, 1tsp of vanilla extract, 30ml of milk and a pinch of cinnamon and ground nutmeg. Mix together.

4) Place your sandwiches into the egg mixture and let both sides soak it up.

5) In a frying pan, heat roughly a teaspoon of butter on a medium heat and then place in your sandwiches. Allow them to cook on both sides until golden.

6) Once both sides are golden, remove from the pan and plate it up baby! Pour over some maple syrup and eat!

PS. Not for the calorie shy but hey, banana is a fruit, you need some dairy AND maple syrup is good for you right? ;-)
